Buttermilk Mashed Veggie
MAKES 6 SERVINGS.
1 head cauliflower
2 cloves garlic, peeled
1/4 cup grated Parmesan cheese
2 tbs butter
2 tbs buttermilk
Cut cauliflower into florets, place in bowl
with 3 tbs water and garlic,
microwave 12 min. or until tender.
Drain, reserving liquid.
In processor, puree cauliflower
and last 3 ingredients until smooth,
adding reserved liquid as needed.
