Caesar for Two

1 each Clove garlic -- minced
1 each Head romaine lettuce
1 each Tin Anchovies (Millionares)
Croutons
4 each Bacon chopped
2 tablespoons Olive oil
2 tablespoons White vinegar
2 tablespoons Worcestershire
Dash tobacco
Lemon
2 each Egg yolks
Cappers
3 tablespoons Parmesan cheese


Crush garlic in oil with fork in bowl.
Add 1/2 can anchovies,capers &
chop mince with oil.
Separate egg yolks in small bowl
and add to mixing bowl
Add Worcestershire sauce, lemon,
Tabasco, vinegar and bacon bits mix well.
Let stand for 5 minutes.
Toss salad and add croutons and cheese.

WORD OF CAUTION ...
It's not always safe to eat raw eggs
Here's a way to cook the yolks slightly

To cook safe egg yolks, mix 2 large yolks with 1 1/2 teaspoons water
and 1 teaspoon of fresh lemon juice.
Put the mixture in a small glass custard cup
and cover tightly with plastic wrap.

Cook on high power (100 percent)
until mixture bubbles, about 45 seconds.
Carefully remove the plastic and stir with a clean fork.
Replace the plastic wrap and cook until it bubbles again,
about 20 seconds, and let it bubble for 5 to 10 more seconds.
Stir again with another clean fork.
Let cool to room temperature.

The mixture will have a slightly thickened texture,
but is fine for a Caesar dressing.
