TURKEY SANDWICHES


8 slices whole wheat or rye bread
Reduced calorie salad dressing
1 med. onion, thinly sliced, red or white
4 oz. fresh mushrooms, sliced
Lettuce leaves
12 oz. shaved turkey

Lightly spread bread with salad dressing.
Using 1 teaspoon oil, saute onion
and then mushrooms; cook until tender.
Layer with turkey slices,
onion and mushroom mixture,
lettuce and top with remaining slices of bread.
Open face sandwiches can be made by
layering turkey, onion and mushroom mixture
and then topped by slice of Mozzarella cheese.
Heat in toaster oven or broiler
until cheese begins to melt and slightly browned.
