Crock Pot
Meaty Jambalaya
with rice, shrimp, sausage, chicken and veggies.

MAKES 12 SERVINGS.

28 oz can diced tomatoes, undrained
1 cup chicken broth
1 green bell pepper, chopped
1 onion, chopped
2 celery ribs, sliced
1/2 cup white wine or broth
4 garlic cloves, minced
2 tsp Cajun seasoning
2 tsp dried parsley flakes
1 tsp dried basil
1 tsp dried oregano
3/4 tsp salt
1 tsp cayenne pepper
2 pounds boneless skinless chicken thighs, cut into pieces
12 oz pkg cooked spicy chicken sausage links
2 pounds shrimp, peeled, deveined
8 cups cooked rice

In a bowl, mix first 13 ingredients.
Place chicken and sausage in a slow cooker.
Add tomato mixture.
Cook on low 9 hours or until chicken is tender.

Stir in shrimp. cook 20 min.
or until shrimp turn pink.
Serve with rice.
